Raw Food Diet Recipes

Here are some of my favorite raw food diet recipes. I’ll post more as I can. Send me yours if you have any and we’ll try them out. If it’s good, we’ll post them here.

 

Zucchini Spaghetti and Fresh Tomato Sauce

 

1 large zucchini
5 small vine ripened tomatoes
1-2 cloves of garlic
10 fresh basil leaves
2 tablespoons of extra virgin olive oil
sea salt and red pepper or red pepper flakes to taste

Cut the zucchini into long flat strips, then slice those into "spaghetti". 
Sprinkle with small amount of sea salt and allow them to wilt in a strainer for about 15 minutes. Cut tomatoes into quarters and place into food processor with remaining ingredients. Pulse for 30 seconds to achieve a chunky texture.  

Rinse and dry the zucchini and toss with the tomato sauce mixture.

 Raw Corn Salad

1 large ear of raw sweet corn
1/2 red bell pepper, chopped
1 large ripe tomato, diced
3 Tblsp. parsley, minced
1 celery stalk, diced
1/4 cup sweet red onion, chopped

Wash all vegetables, remove kernels of corn from cob, dice tomato, dice celery, chop red pepper and onion, and mince the parsley. Combine in a bowl, cover and place in refrigerator for half an hour to allow flavors to blend. Drizzle with olive oil before serving and season with salt and pepper to taste.

 

Ginger Juice
This is a juicer recipe for some wicked good raw ginger ale.  

1 hand of fresh ginger
6 large green apples
1.5 liters of San Pelligrino or Perrier Water.  

 

Juice apples and ginger together. Top it off with the sparkling water.

 

Big Man Raw Salad

1/2 head of Romaine, shredded
1-2 zuccini, shredded
1-2 carrots, shredded
1 cup shredded red cabbage
1 cup of chopped cauliflower
1 red bell pepper - diced

Mix all ingredients in a large salad bowl

 

Dressing
2 tomatoes
1 stalk celery
2 carrots
Juice of one lemon
1/2 Avocado
Blend the above 4 ingredients in a blender…
Pour over the salad and mix thoroughly. Refrigerate 1/2 hour before serving.
